The fruit came from U of MN research vineyards in Chanhassen, MN, to see how Itasca would fare as a bottle-fermented sparkling wine. The result: a fantastic, light, lean, and elegant sparkling wine, perfect for toasting this holiday season.
The juice underwent spontaneous fermentation, inspiring the name “Sauvage”—French for “wild.” This wild fermentation brings a unique personality to the wine, with floral and botanical notes along with lemon pith, toast, and minerals. Bottled in June 2023, it was then left to mature on the yeast in the bottle for 16 months until disgorgement.
